I can spend around $250 for one, the main purpose being general camping with anti-bears in mind. There's only going to be 2 of us, maybe 3 but would definitely like the room to "move" around in.

Here is the general rule for space, if there is 2 get a three if there is three get a four and so on. A $250 budget will get you a really nice family camping tent and as suggested Coleman is the leader in this category. I prefer for family camping even more room enough to stand up in and the ability to use all the bells a whistles a tent could have so in your case I recommend the Coleman Instant tent 6
Now some important information no tent will protect you from bears and family camping tents in general are for fair weather use if your looking for a bear proof or rather resistant shelter you will need a camper trailer or rv.
There are tents that have greater weather protection and these are in the mountaineering class of tents again $250 will get you a nice one a little less roomy and you won't be able to stand up in it but it will meet the need of a good car camping extreme weather tent. For this I recommend the Coleman Hooligan 4
We have a trailer tent. We also have a tent. believe me the trailer tent leaves the tent in the dark every time. The one we have is a Conway Havana DL. I think it is quite old but we were offered it at a good price. It has two beds both of which are well off the floor. It also has it's own cooking and sink facility built in.Lots of space and you can add an awning for more space. It is easy to put up and take down when you have done it once or twice.New trailer tents are expensive so i would look around. Good luck.

If you are car-camping, then $250-$300 will buy you a very spacious tent. Look at reviews for large, two-room cabin tents, such as Eureka Copper Canyon, which is really one room plus a screen-room.
Ease of set-up would be a Coleman Instant 8, for example, which fits two queen-sized air mattresses.
If you are backpacking, then you need a dome tent no more than four pounds in weight: Mutha Hubba, for example.
Bears are friendly. I have close, peaceful encounters with them every year, but never around my clean, dispersed campsites in the wilderness. Keep food in bear-tight boxes away from your tent or suspended high between trees. Bear protection has nothing to do with tent selection.

For car camping look at a 10 X10 EZ-up straight leg awning, cost $99. Then pick up the tent package for it, cost $59. About $175 tax and all out the door. It is 100 square feet and the ceiling is over 8 feet high, 3 large windows, a large door and waterproof floor. I can set it up myself in less than five minutes, you set the awning up and the tent simply attachs to the frame. Available at Wal-Mart and Big Five Sporting Goods.
